Arr\u00f2s Bomba<\/li>\n\n\n\n<li>800 grs. S\u00edpia<\/li>\n\n\n\n<li>600 grs. Clo\u00efsses<\/li>\n\n\n\n<li>2 Tom\u00e0quets Madurs grans<\/li>\n\n\n\n<li>2 Cebes grans<\/li>\n\n\n\n<li>2 Pebrots Verds<\/li>\n\n\n\n<li>3 Dents d&#039;All<\/li>\n\n\n\n<li>2,100 litres de Fumet de Peix<\/li>\n\n\n\n<li>All i Julivert picats<\/li>\n\n\n\n<li>Tinta de S\u00e8pia<\/li>\n\n\n\n<li>Oli d&#039;Oliva<\/li>\n\n\n\n<li>Sal<\/li>\n\n\n\n<li>Salsa Allioli<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Netegem les s\u00edpies i reservem la salsa que \u00e9s una bossa que hi ha als tentacles. Reservem tamb\u00e9 la tinta de les s\u00edpies.<\/li>\n\n\n\n<li>Posem una paella gran al foc i hi afegim abundant oli d&#039;oliva i quan estigui ben calent hi posem la s\u00edpia tallada a daus petits i la sofregim. Reservem<\/li>\n\n\n\n<li>Al mateix oli calent posem les clo\u00efsses que pr\u00e8viament hem deixat en remull durant uns 30 minuts perqu\u00e8 deixessin anar la terra i esperem que s&#039;obrin les clo\u00efsses. Un cop obertes les retirarem de la paella.<\/li>\n\n\n\n<li>Hi afegim una mica m\u00e9s d&#039;oli a la paella i hi posem els alls picats i les cebes tallades molt petites. Li donem unes voltes i hi afegim el pebrot tallat petit.<\/li>\n\n\n\n<li>Sofregirem tot junt i quan estigui una mica daurat afegirem el tom\u00e0quet i salarem. Sofregirem fins que quedi com una melmelada.<\/li>\n\n\n\n<li>Afegirem la salsa de la s\u00edpia i incorporem la s\u00edpia donant-hi unes voltes.<\/li>\n\n\n\n<li>A continuaci\u00f3, posem l&#039;arr\u00f2s i remenem fins que l&#039;arr\u00f2s tingui un color una mica daurat.<\/li>\n\n\n\n<li>Amb una mica de fumet dissoldrem la tinta de la s\u00edpia.<\/li>\n\n\n\n<li>Afegirem el fumet o brou de peix calent. Reservarem una mica. Normalment s\u00f3n tres tasses de brou per una d&#039;arr\u00f2s. Posarem la tinta de la s\u00edpia fins aconseguir un color gaireb\u00e9 negre.<\/li>\n\n\n\n<li>Afegirem l&#039;all i el julivert picats.<\/li>\n\n\n\n<li>Anirem movent la paella perqu\u00e8 no s&#039;enganxi l&#039;arr\u00f2s al fons. Deixarem coure durant uns 15 minuts aproximadament. Si queda l&#039;arr\u00f2s sec, hi afegirem una mica m\u00e9s de fumet per coure&#039;l b\u00e9.
