Bolets deshidratats (Ceps)<\/li>\n\n\n\n<li>3 Cebes morades<\/li>\n\n\n\n<li>1 Tom\u00e0quet<\/li>\n\n\n\n<li>1 Pastanaga<\/li>\n\n\n\n<li>6 dents d&#039;all<\/li>\n\n\n\n<li>40 gr. Ametlles torrades<\/li>\n\n\n\n<li>Farigola i Llorer<\/li>\n\n\n\n<li>Julivert<\/li>\n\n\n\n<li>1 Branca de Canyella<\/li>\n\n\n\n<li>Nou Moscada<\/li>\n\n\n\n<li>150 ml. Vi Blanc<\/li>\n\n\n\n<li>80 ml. Brandy<\/li>\n\n\n\n<li>Oli d&#039;Oliva<\/li>\n\n\n\n<li>Sal i Pebre negre<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Hidratarem els bolets amb aigua durant una hora.<\/li>\n\n\n\n<li>Tallarem a juliana les cebes. La pastanaga i 4 alls els tallarem a discos. El tom\u00e0quet el pelarem i el tallarem a trossets petits.<\/li>\n\n\n\n<li>Salpebrarem el rod\u00f3 de vedella. En una cassola hi posarem l&#039;oli i quan estigui bullint daurarem la carn per tots els costats. Reservarem.<\/li>\n\n\n\n<li>Abaixarem el foc i afegirem els alls, la ceba i la pastanaga i ofegarem durant uns 10 minuts. Incorporarem el tom\u00e0quet trossejat i courem durant uns 5 minuts.<\/li>\n\n\n\n<li>Incorporarem la carn i abans de llen\u00e7ar el brandi, hem d&#039;apagar l&#039;extractor de cuina perqu\u00e8 es podria encendre. Flamejarem la carn i quan el foc s&#039;apagui posarem el llorer, la farigola, la branca de canyella i la nou moscada. Afegirem aigua bullint i taparem la cassola i cuinarem amb el foc baix<\/li>\n\n\n\n<li>Farem la picada amb les ametlles, les dues dents d&#039;all i el julivert. El picarem amb un batedor el\u00e8ctric o manualment.<\/li>\n\n\n\n<li>Cuinarem la carn durant una hora i tot seguit la traurem de la cassola.<\/li>\n\n\n\n<li>Colarem els bolets i guardem l&#039;aigua de la hidrataci\u00f3.<\/li>\n\n\n\n<li>Batem la salsa i la incorporarem de nou a una cassola juntament amb la carn, els bolets escorreguts i la picada, i tamb\u00e9 una mica de l&#039;aigua dels bolets.<\/li>\n\n\n\n<li>Seguirem cuinant la carn fins que vegem que est\u00e0 toveta, aproximadament una hora m\u00e9s. En total l&#039;hem cuinat dues hores a foc lent, i afegint aigua bullint, quan ho ha necessitat per a la cocci\u00f3-<\/li>\n\n\n\n<li>Deixarem refredar la carn totalment per poder tallar-la a rodanxes finites,<\/li>\n\n\n\n<li>Escalfarem de nou la salsa. Si est\u00e0 molt espessa afegirem m\u00e9s aigua calenta.
