Arr\u00f2s Bomba<\/li>\n\n\n\n<li>600 ml. Fumet de Peix (o el que admeti)<\/li>\n\n\n\n<li>600 gr. S\u00edpia<\/li>\n\n\n\n<li>8 Gambes vermelles<\/li>\n\n\n\n<li>2 Tom\u00e0quets Madurs<\/li>\n\n\n\n<li>1 Ceba<\/li>\n\n\n\n<li>3 dents d&#039;all<\/li>\n\n\n\n<li>Safr\u00e0<\/li>\n\n\n\n<li>\u00bd culleradeta de caf\u00e8 de Pebre vermell Dol\u00e7<\/li>\n\n\n\n<li>Oli d&#039;Oliva&nbsp;<\/li>\n\n\n\n<li>Sal<\/li>\n\n\n\n<li>\u00bd culleradeta de Sucre<\/li>\n<\/ul>\n\n\n\n<p>Per a la <a href=\"https:\/\/elfornerdealella.com\/ca\/salsa-all-i-oli\/\">Salsa All i Oli<\/a>:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 Rovell d&#039;Ou<\/li>\n\n\n\n<li>Sal<\/li>\n\n\n\n<li>Oli d&#039;Oliva<\/li>\n\n\n\n<li>1 pessic d&#039;Aigua<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Picarem finament la ceba i els alls. Ratllarem els tom\u00e0quets i afegirem el sucre per treure l&#039;acidesa. Ho reservarem tot.<\/li>\n\n\n\n<li>La s\u00edpia l&#039;hem rentat i la tallarem a trossets petits. Traurem la salsa de la s\u00edpia que es troba a l&#039;intest\u00ed i la reservarem a part.<\/li>\n\n\n\n<li>Poseu l&#039;oli en una paella i fregiu lleugerament les gambes. Reservarem les gambes.<\/li>\n\n\n\n<li>Afegirem a la paella la s\u00edpia i ofegar-la durant uns dos minuts amb el foc baix. Incorporarem els alls picats, farem un parell de voltes, afegirem la ceba i sofregirem lentament fins que la ceba adquireixi un color daurat.<\/li>\n\n\n\n<li>Afegirem els tom\u00e0quets, remourem i sofregirem. Un cop tinguem el sofregit com si fos una melmelada hi afegirem l&#039;arr\u00f2s.<\/li>\n\n\n\n<li>Pelarem les gambes, reservant el cap i les pells. Triturarem els caps amb una mica de brou. Ha de quedar ben fi.<\/li>\n\n\n\n<li>Donarem unes voltes a l&#039;arr\u00f2s perqu\u00e8 es torri una mica i hi afegirem la salsa de la s\u00edpia i tamb\u00e9 el safr\u00e0 i el pebre vermell. Remenarem perqu\u00e8 s&#039;integri. Deixarem reposar uns 10 minuts.<\/li>\n\n\n\n<li>A continuaci\u00f3 hi posarem el brou de peix bullint i el triturat de les gambes. Que es pot colar si no ha quedat prou fi.<\/li>\n\n\n\n<li>Les gambes les afegim gaireb\u00e9 al final de la cocci\u00f3 de l&#039;arr\u00f2s.<\/li>\n\n\n\n<li>Comprovarem de sal i si cal tamb\u00e9 afegirem una mica m\u00e9s de brou, sempre dep\u00e8n del tipus d&#039;arr\u00f2s que s&#039;utilitzi. El temps solen ser uns 15 minuts de cocci\u00f3, per\u00f2 tamb\u00e9 dep\u00e8n del tipus d&#039;arr\u00f2s. Deixarem reposar tapat amb drap de cuina durant uns 5 minuts abans de servir-ho.<\/li>\n\n\n\n<li>Per fer l&#039;all i l&#039;oli. En un morter posarem els alls tallats a trossets i la sal. Amb el pal del morter el picarem fins que quedi una pasta. Afegiu-hi el rovell d&#039;ou i unes gotes d&#039;aigua.
