Galetes Maria<\/li>\n\n\n\n<li>90 grs. Mantega<\/li>\n<\/ul>\n\n\n\n<p>Per a la Mousse:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>450 grs. Torr\u00f3 de Xixona<\/li>\n\n\n\n<li>900 grs. Nata per muntar 35% mat\u00e8ria greix<\/li>\n\n\n\n<li>120 grs. Sucre<\/li>\n\n\n\n<li>3 Ous<\/li>\n\n\n\n<li>225 ml. Llet<\/li>\n\n\n\n<li>15 grs. Gelatina Neutra en pols<\/li>\n\n\n\n<li>1 pessic de Sal<\/li>\n\n\n\n<li>100 grs. Ametlla Crocanti<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3<strong>:<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Per fer la base del past\u00eds triturem les galetes i fondem la mantega al microones. Ho barregem tot fins aconseguir una pasta que dipositarem en un c\u00e8rcol que hem posat damunt una safata amb paper de coure. Aplanem b\u00e9 perqu\u00e8 quedi ben allisada la massa. Ho guardem al congelador durant mitja hora.<\/li>\n\n\n\n<li>Posem un cass\u00f3 al foc amb la llet i hi afegim el torr\u00f3 trossejat. Amb el foc molt baix remourem fins que es desfaci completament el torr\u00f3 i obtenir una massa. Cal remoure sempre perqu\u00e8 no s&#039;enganxi la massa.<\/li>\n\n\n\n<li>Muntem a punt de neu les clares d&#039;ou amb una mica de sal.<\/li>\n\n\n\n<li>Posem en un bol els rovells d&#039;ou i el sucre. Batem amb un batedor manual fins aconseguir una barreja escumosa i de color blanquin\u00f3s. Hi afegim una mica d&#039;aquesta barreja al cass\u00f3 amb el torr\u00f3. Barregem b\u00e9 i seguidament afegim la resta de la barreja dels rovells fins que quedi ben integrat.<\/li>\n\n\n\n<li>Encenem el foc i courem aquesta massa durant uns dos o tres minuts sense deixar de remenar i amb el foc molt baix. Afegim la gelatina en pols i barregem perqu\u00e8 s&#039;hi integri. Apaguem el foc i deixem refredar.<\/li>\n\n\n\n<li>Muntem la nata i hi afegirem la barreja del torr\u00f3 i amb un batedor manual ho anirem integrant tot.<\/li>\n\n\n\n<li>Despr\u00e9s afegim les clares a punt de neu i amb una esp\u00e0tula ho anirem integrant. Cal fer-ho amb moviments envoltants de baix a dalt perqu\u00e8 no s&#039;abaixin les clares.<\/li>\n\n\n\n<li>A continuaci\u00f3 posem la mousse dins del motlle allisant-la b\u00e9 perqu\u00e8 quedi una superf\u00edcie ben llisa. Posem per sobre el granet d&#039;ametlla crocanti i guardem el past\u00eds al congelador durant unes quatre hores.<\/li>\n\n\n\n<li>Per desemmotllar el past\u00eds mullem amb aigua calenta un drap de cuina i ho passem al voltant del c\u00e8rcol.
