Calamars petits<\/li>\n\n\n\n<li>600 grs. Llagostins<\/li>\n\n\n\n<li>200 grs. Salsa de Tom\u00e0quet fregit<\/li>\n\n\n\n<li>1 Ceba gran<\/li>\n\n\n\n<li>4 Dents d&#039;All&nbsp;<\/li>\n\n\n\n<li>Julivert picat<\/li>\n\n\n\n<li>125 ml. Vi Blanc<\/li>\n\n\n\n<li>60 ml. Brandy<\/li>\n\n\n\n<li>1 Cullerada sopera de Farina<\/li>\n\n\n\n<li>1 Guindilla o Caiena<\/li>\n\n\n\n<li>Oli d&#039;Oliva<\/li>\n\n\n\n<li>Sal<\/li>\n\n\n\n<li>600 ml. Aigua per al Fumet<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Comen\u00e7arem pelant els llagostins. Traurem l&#039;intest\u00ed dels llagostins que \u00e9s un com un fil gruixut que est\u00e0 per la part de dalt. S&#039;estira i pr\u00e0cticament surt sol. Reservarem el cap i totes les pells.<\/li>\n\n\n\n<li>En una cassola amb una mica d&#039;oli, sofregirem els caps i les pells durant uns 2 minuts. Afegirem l&#039;aigua per fer el fumet i la sal. Courem els caps durant uns 7 minuts.<\/li>\n\n\n\n<li>Colarem el brou en un colador xin\u00e8s i aixafarem els caps amb la m\u00e0 del morter per acabar de treure tot el suc.<\/li>\n\n\n\n<li>En una cassola gran hi posarem una mica d&#039;oli i quan estigui calent hi posarem els alls picats. Donarem unes voltes i afegirem la ceba tamb\u00e9 picada. Remenarem i sofregirem amb el foc baix durant uns 3 minuts. Tot seguit afegirem la farina i remourem. Courem durant un minut perqu\u00e8 la farina s&#039;incorpori b\u00e9.<\/li>\n\n\n\n<li>Afegirem els calamars nets, poden ser sencers si s\u00f3n petits o b\u00e9 trossejats.<\/li>\n\n\n\n<li>Ofegarem els calamars i quan canvi\u00efn una mica de color, els donarem la volta. Els cuinem durant uns 5 minuts.<\/li>\n\n\n\n<li>Afegirem el vi, el brandi i el bitxo. Remeneu-ho i deixeu que s&#039;evapori l&#039;alcohol.<\/li>\n\n\n\n<li>Seguidament hi tirem la salsa de tom\u00e0quet fregit, remenant perqu\u00e8 es vagi integrant tot. Afegirem tamb\u00e9 el fumet. Ens reservarem una mica per si la salsa qued\u00e9s massa l\u00edquida.<\/li>\n\n\n\n<li>Courem amb el foc baix durant uns 20 minuts, vigilant que no li falti brou per a la cocci\u00f3, i remenant perqu\u00e8 no s&#039;enganxi. Comprovarem de sal.<\/li>\n\n\n\n<li>Finalment posarem els llagostins i el julivert picat.
