Un guisat cuinat amb el coll i la part de baix de les costelles de xai per aprofitar les parts m\u00e9s senzilles i econ\u00f2miques. Xai trossejat<\/li><li>2 Patates&nbsp;<\/li><li>1 Ceba gran<\/li><li>2 Pastanagues<\/li><li>2 Dents d&#039;All<\/li><li>1 Tom\u00e0quet madur<\/li><li>100 gr. P\u00e8sols congelats<\/li><li>1 litre de Brou de Carn<\/li><li>50 ml. Brandy<\/li><li>200 ml. Vi Blanc<\/li><li>Suc de \u00bd Llimona<\/li><li>Farigola i Romero<\/li><li>Oli d&#039;Oliva<\/li><li>Sal i Pebre negre<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"elaboracion\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Tallarem la ceba a trossos petits i els alls a discos. Tallarem a discos les pastanagues. Pelarem el tom\u00e0quet i el tallarem a trossets.<\/li><li>Salpebrarem la carn pels dos costats.<\/li><li>Posarem oli d&#039;oliva en una cassola ampla i quan estigui molt calenta daurarem la carn pels dos costats amb el foc fort. Traurem la carn i reservarem.<\/li><li>Abaixarem el foc i afegirem la ceba i els alls. Ofegarem durant uns 2 minuts. Agregarem el tom\u00e0quet i remourem. Courem durant uns 3 minuts m\u00e9s, fins que quedi tot ben fet.<\/li><li>Incorporarem la carn i amb molt de compte, vigilant que l&#039;extractor de cuina estigui apagat, llen\u00e7arem el brandi i l&#039;encendrem.<\/li><li>A continuaci\u00f3 hi afegirem el vi blanc, el suc de llimona, la farigola i el roman\u00ed. Quan hagi evaporat l&#039;alcohol, tirem el brou de carn a la cassola i guisarem durant uns 45 minuts amb la cassola tapada. Si li falt\u00e9s brou es pot afegir m\u00e9s aigua per\u00f2 sempre calenta.<\/li><li>Pelarem les patates i les espetejarem en trossos petits. Fer petar \u00e9s enfonsar el ganivet i estirar en tallar, aix\u00ed es deixa anar millor el mid\u00f3 que porten les patates.<\/li><li>Afegirem les patates i les pastanagues.
