Gemmes d&#039;Ou<\/li><li>1 Estrella d&#039;An\u00eds Estrellat<\/li><li>225 ml. Aigua<\/li><li>300 gr. Sucre en gra<\/li><li>25 gr. Maicena<\/li><li>3 Clares d&#039;ou<\/li><li>115 gr. Sucre m\u00f2lt<\/li><li>15 gr. Suc de Lima<\/li><li>Gingebre<\/li><li>Ratlladura de Lima<\/li><li>1 pessic de Sal<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Poseu un cass\u00f3 al foc amb l&#039;aigua i l&#039;estrella d&#039;an\u00eds. Quan bulli laigua apagarem el foc. Taparem el cass\u00f3 i deixarem reposar durant 30 minuts. Traurem despr\u00e9s l&#039;an\u00eds estavellat.<\/li><li>Separarem 3 clares d&#039;ou. Muntarem les clares amb una mica de sal i abans que estiguin muntades del tot afegirem el sucre m\u00f2lt a poc a poc, sense deixar de batre.<\/li><li>Finalment afegirem el suc de llima i acabarem de muntar.<\/li><li>En una safata de forn i amb paper d&#039;enfornar per sobre estenem la merenga procurant que ens quedi d&#039;un gruix de \u00bd cent\u00edmetre.<\/li><li>Hem preescalfat el forn a 60 \u00ba cent\u00edgrads per dalt i baix i enfornem durant 5 hores<\/li><li>Pesarem els rovells d&#039;ou i els batrem amb unes varetes el\u00e8ctriques. Un cop escumades afegirem la maizena i la integrarem amb les varetes.<\/li><li>Afegirem el sucre en gra a l&#039;aigua que hem infusionat i quan bulli l&#039;aigua, apagarem el foc.<\/li><li>Afegirem en forma de fil el xarop als rovells batent constantment perqu\u00e8 no es tallin els rovells.<\/li><li>Passarem la barreja a un recipient ample i remourem amb un batedor manual constantment i de forma en\u00e8rgica perqu\u00e8 en coure no s&#039;enganxi a la cassola. Courem amb el foc molt baix.<\/li><li>Si tenim un term\u00f2metre de cuina, hem d&#039;apagar el foc quan arribi als 80\u00ba. Sense term\u00f2metre, apagarem el foc quan comenci a bullir i s&#039;espesseixi. Deixarem refredar i despr\u00e9s guardarem al frigor\u00edfic durant unes 2 o 3 hores tapat amb paper film.<\/li><li>Posarem la crema en una copa o recipient de vidre i per sobre adornarem amb trossets de la merenga que hem preparat anteriorment.
