El Risotto \u00e9s un plat t\u00edpic itali\u00e0, un arr\u00f2s molt crem\u00f3s mantegat amb mantega i formatge parmes\u00e0. Arr\u00f2s Arbori o Carnalori o Bomba<\/li><li>250 gr. Gambes<\/li><li>1 Ceba<\/li><li>2 Dents d&#039;All<\/li><li>750 ml. Brou de Peix aprox.<\/li><li>100 ml. Vi Blanc<\/li><li>50 gr. Mantega<\/li><li>50 gr. Formatge Parmes\u00e0 ratllat<\/li><li>Julivert picat<\/li><li>Oli d&#039;Oliva<\/li><li>Pebre negre i Sal<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Pelarem les gambes, reservant els caps i les pells. Amb unes pinces traurem l&#039;intest\u00ed a les gambes, estirant amb molt de compte perqu\u00e8 no es trenqui.<\/li><li>Picarem finament la ceba i els alls i els ajuntem.<\/li><li>En una paella petita i amb una mica d&#039;oli fregiu lleugerament les gambes, nom\u00e9s volta i volta. Reservarem.<\/li><li>Al mateix oli fregirem els caps i les pells de les gambes durant uns 2 minuts. Tot seguit afegirem una mica d&#039;aigua i courem durant uns 5 minuts. Colarem amb un colador xin\u00e8s i amb un pal de morter ho aixafarem perqu\u00e8 surtin tots els sucs.<\/li><li>Afegirem aquest suc al brou de peix i ho escalfarem. Ha de bullir.<\/li><li>A la cassola on anem a fer el risotto hi posarem una mica d&#039;oli i quan estigui calent hi tirem l&#039;all i la ceba picats. Ofegarem i cuinarem amb el foc molt baix uns 5 minuts, fins que estigui transparent.<\/li><li>Afegirem l&#039;arr\u00f2s i el remourem perqu\u00e8 l&#039;arr\u00f2s es vagi nacarant i deixi anar el mid\u00f3. Quan comenci a daurar-se hi posarem el vi amb molt de compte. Remenarem.<\/li><li>Quan hagueu evaporat l&#039;alcohol incorporarem una mica de brou bullint, nom\u00e9s per cobrir l&#039;arr\u00f2s. Abocarem una mica de pebre.<\/li><li>Anirem movent la cassola i tirant brou bullint cada vegada que calgui. Les gambes les incorporarem als 10 minuts de cocci\u00f3.<\/li><li>Hem cuinat el risotto durant 16 minuts, per\u00f2 dep\u00e8n de cada tipus d&#039;arr\u00f2s. Ha de quedar al dente.<\/li><li>Finalment i amb el foc apagat hi afegirem la mantega a temperatura ambient.
