Estan elaborats amb Mazap\u00e1n i tenen forma d&#039;un os. Ametlles Molides<\/li>\n\n\n\n<li>150 grs. Sucre<\/li>\n\n\n\n<li>80 ml. Aigua<\/li>\n<\/ul>\n\n\n\n<p><strong>Per fer la Crema de Yema:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 Gemmes d&#039;Ou<\/li>\n\n\n\n<li>100 grs. Sucre<\/li>\n\n\n\n<li>50 ml. Aigua<\/li>\n<\/ul>\n\n\n\n<p><strong>Per fer el Glassejat:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>100 grs. Sucre Molit (Glas)<\/li>\n\n\n\n<li>30 ml. Aigua<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Per fer el massap\u00e0 posarem un cass\u00f3 petit al foc i afegirem l&#039;aigua i el sucre. Farem un alm\u00edvar i remourem fins que comenci a bullir. Deixarem entebeir una mica l&#039;alm\u00edvar.<\/li>\n\n\n\n<li>En un bol hi posem l&#039;ametlla m\u00f2lta ia poc a poc hi incorporem l&#039;alm\u00edvar. Amb una esp\u00e0tula de fusta remourem i integrarem tot l\u00b4alm\u00edvar.<\/li>\n\n\n\n<li>Amassarem primer amb l&#039;esp\u00e0tula i despr\u00e9s amb les mans. Traurem la massa del bol i acabarem de pastar fins a aconseguir una massa ben fina amb una textura semblant a la pastelina. Farem una bola i deixarem que s&#039;acabi de refredar.<\/li>\n\n\n\n<li>Un cop refredat ho estirem una mica donant-li una forma cil\u00edndrica.<\/li>\n\n\n\n<li>A la taula de treball posarem un full de paper de coure o una placa de silicona i hi posarem per sobre sucre m\u00f2lt per poder estirar b\u00e9 el massap\u00e0. Amb un corr\u00f3 empolvorat tamb\u00e9 amb sucre m\u00f2lt estirem i allisem la massa procurant que quedi una forma rectangular i d&#039;un gruix de 2 o 3 mil\u00b7l\u00edmetres. Ha de quedar ben laminada.<\/li>\n\n\n\n<li>Amb l\u00b4ajuda d\u00b4una regla farem un rectangle i tallarem unes l\u00e0mines de 7 cm. x 5 cm. El massap\u00e0 que ens sobri despr\u00e9s el tornem a estirar i farem m\u00e9s trossets.<\/li>\n\n\n\n<li>Amb un escuradents del tipus de les broquetes morunes farem unes marques (veure el v\u00eddeo) i amb una esp\u00e0tula agafarem un tros i per la part que no est\u00e0 marcada hi posarem una mica de sucre m\u00f2lt. Deixarem sense sucre una vora de la part m\u00e9s ampla.<\/li>\n\n\n\n<li>Enrotllem l&#039;os de sant per la part que no t\u00e9 les marques amb un pal de fusta (nosaltres hem fet servir el m\u00e0nec d&#039;una cullera de fusta).<\/li>\n\n\n\n<li>En arribar a la vora, pintem amb un pinzell mullat amb aigua i unim el massap\u00e0 i amb molt de compte traiem el pal. Deixarem assecar els ossos de sant durant uns 90 minuts.<\/li>\n\n\n\n<li>Preparem la crema de rovell fent un alm\u00edvar. Per fer-ho posem un cass\u00f3 al foc i hi afegim l&#039;aigua i el sucre. Quan comenci a bullir apaguem el foc i deixem entebeir.<\/li>\n\n\n\n<li>Batem una mica els rovells d&#039;ou i mica en mica integrarem l&#039;alm\u00edvar sense deixar de batre fins que estigui tot ben integrat.<\/li>\n\n\n\n<li>Farem un bany maria posant aigua en un cass\u00f3 i quan comenci a bullir l&#039;aigua hi posarem a sobre un recipient on posarem la crema de rovell.<\/li>\n\n\n\n<li>Posarem al recipient la crema de rovell i sense deixar de remenar courem la crema de rovell durant uns 15\/20 minuts fins que quedi espessa. Deixarem refredar.<\/li>\n\n\n\n<li>Farcim els ossos de sant amb una m\u00e0niga pastissera amb un filtre ben llarg per les dues puntes procurant que la crema arribi fins al centre.
