Amb l&#039;arribada de la festivitat de Pasqua de Resurrecci\u00f3 prepararem una Mona de Pasqua casolana per regalar a la nostra fillola. Aquesta en particular la farem de Pa de pessic farcit de Trufa i amb Yema per sobre. DIAMETRE:<\/h2>\n\n\n\n<p>Per fer el pa de pessic:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>8 Ous<\/li><li>350 gr. Farina<\/li><li>350 gr. Sucre<\/li><li>55 ml. Oli d&#039;Oliva<\/li><li>55 ml. Llet<\/li><li>16 gr. Llevat en pols Royal<\/li><li>Ratlladura de Llimona<\/li><li>Un pessic de Sal<\/li><\/ul>\n\n\n\n<p>Per fer el rovell:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>2 rovells d&#039;ou<\/li><li>125 gr. Sucre<\/li><li>15 gr. Mantega<\/li><li>25 gr. Maicena<\/li><li>90 ml. Aigua<\/li><li>90 ml. Llet<\/li><li>1 cullerada sopera Vainilla l\u00edquida<\/li><\/ul>\n\n\n\n<p>Per fer la T\u00f2fona:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>500 ml. Nata muntar 35% mat\u00e8ria greix<\/li><li>40 gr. Cacau en Pols pur<\/li><li>100 gr. Sucre<\/li><\/ul>\n\n\n\n<p>Per fer l&#039;alm\u00edvar:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>70 ml. Aigua<\/li><li>70 gr. Sucre<\/li><li>50 ml. Cointreau (opcional)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Per fer el pa de pessic separarem les clares dels rovells dels ous. Batrem una mica els rovells i el sucre. Hi afegirem la llet, la ratlladura de llimona i l&#039;oli. Batrem durant uns 5 minuts m\u00e9s.<\/li><li>Muntarem les clares a punt de neu amb una mica de sal. Incorporarem els rovells batuts a les clares en un parell de vegades amb moviments envoltants, procurant que no es baixin les clares.<\/li><li>Barrejarem la farina amb el llevat qu\u00edmic i tamisarem. Afegirem la farina diverses vegades, amb moviments envoltants, procurant arribar fins al fons del recipient per poder recollir tota la farina que hagi caigut.<\/li><li>En un motlle desmuntable de 28 cm. posarem a la base un paper de coure i despr\u00e9s posarem el c\u00e8rcol. Tallarem una mica el paper sobrant i untarem tot amb una mica de mantega. Dipositarem la massa i donarem uns cops perqu\u00e8 surtin les bombolles. Hem preescalfat el forn a 180 \u00ba cent\u00edgrads per dalt i baix i enfornem durant 40 minuts. Dep\u00e8n del forn. Punxarem amb un escuradents i si surt sec, ja est\u00e0 cuit. Deixarem refredar.<\/li><li>Per fer el rovell posarem la mantega, la meitat de l&#039;aigua i la llet i el sucre. Courem amb el foc molt baix durant uns 3 minuts. Deixarem refredar.<\/li><li>En un recipient hi posarem la resta de l&#039;aigua i la llet, la maizena i la vainilla l\u00edquida. Batrem fins que s&#039;integri totalment la maizena. Afegirem els rovells d&#039;ou i batrem.<\/li><li>Afegiu-hi a poc a poc aquesta barreja a la mantega i l&#039;aigua que ja estar\u00e0 refredada.<\/li><li>Escalfarem amb el foc al m\u00ednim, no heu d&#039;arribar a bullir. Remenarem constantment amb una cullera de fusta, fins que comenci a espessir. Deixarem refredar totalment.<\/li><li>Farem un alm\u00edvar amb aigua i sucre. Ha de bullir durant uns 3 minuts, fins que s&#039;espesseixi una mica. Afegirem el licor i bullirem una mica m\u00e9s.<\/li><li>Muntarem la nata amb unes varetes el\u00e8ctriques i abans de muntar del tot afegirem el sucre. Incorporarem el cacau en pols i remourem per integrar-lo.<\/li><li>Allisarem el pa de pessic tallant el sobrant de la part de dalt. Obrirem el pa de pessic per la meitat i pintarem amb l&#039;alm\u00edvar. Repartirem la t\u00f2fona en una de les parts del pa de pessic. Taparem el pa de pessic i per sobre estenem una bona capa de la crema de rovell. Allisarem i pels costats tamb\u00e9 hi posarem el rovell.&nbsp;<\/li><li>Per cremar el rovell, posarem abundant sucre en gra per sobre, i cremarem amb un cremador. Esperarem que es refredi totalment<\/li><li>Cobrirem els costats amb el granet de xocolata. Posarem la resta de la t\u00f2fona en una m\u00e0niga pastissera amb un filtre arrissat i farem unes roses de decoraci\u00f3.
