Cal anar amb molt de compte ja que l&#039;escor\u00e7a \u00e9s molt dura. Tamb\u00e9 hi ha qui per obrir-la la tira a terra i li d\u00f3na diversos cops per partir-la.<\/li>\n\n\n\n<li>Un cop tallada farem quatre trossos de cada meitat, segons la mida.<\/li>\n\n\n\n<li>Traurem les llavors negres amb compte. Es poden treure tamb\u00e9 despr\u00e9s de bullir la carbassa.<\/li>\n\n\n\n<li>Posarem els trossos de carbassa amb la pell cap amunt en una cassola gran. Cobrirem la carbassa amb aigua i la bullirem amb el foc baix i tapada. L&#039;hem bullit durant una hora, per\u00f2 dep\u00e8n una mica de la carbassa. Ha de quedar molt tova i els filaments es comencin a desfer. Escorrerem i la deixarem refredar. Reservarem una mica d&#039;aigua de la cocci\u00f3, per si calgu\u00e9s despr\u00e9s.<\/li>\n\n\n\n<li>Traurem la resta de llavors negres. Amb l\u00b4ajuda d\u00b4una cullera traurem tota la polpa. Ha de quedar la closca neta.<\/li>\n\n\n\n<li>Pesarem la polpa, la nostra pesa 1.300 kg.  i li afegirem el 75% del seu pes, \u00e9s a dir 1 kg. de sucre. La proporci\u00f3 ja \u00e9s al vostre gust. Si us agrada molt dol\u00e7a es pot posar la mateixa quantitat de polpa que de sucre i si no agrada tan dol\u00e7a es pot fer la proporci\u00f3 de la meitat de sucre que de polpa.<\/li>\n\n\n\n<li>Posarem la polpa de la carbassa i el sucre en una cassola i afegirem el suc d&#039;una llimona perqu\u00e8 no cristal\u00b7litzi el sucre. Ho remourem tot perqu\u00e8 s&#039;integrin tots els elements. Afegirem els pals de canyella i cuinarem els cabells d&#039;\u00e0ngel durant uns 15 minuts a foc baix, remenant de tant en tant. Un cop transcorregut aquest temps remourem sempre, per controlar que no es quedi sec. Nosaltres ho hem tingut bullint uns 10 minuts m\u00e9s. No ha calgut afegir-hi suc de bullir, per\u00f2 si en coure veieu que ho necessita sempre es pot afegir.<\/li>\n\n\n\n<li>Traurem els pals de canyella i ho deixarem refredar.
