Un cop cuinades a foc lent estan delicioses, queden molt tendres per dins i es desfan com si fossin de mantega. Jueus<\/li>\n\n\n\n<li>250 grs. Xori\u00e7o per guisar<\/li>\n\n\n\n<li>150 grs. Panceta de Porc<\/li>\n\n\n\n<li>250 grs. Orella de Porc o Careta<\/li>\n\n\n\n<li>\u00bd Peu de Porc (Manita)<\/li>\n\n\n\n<li>2 Botifarra<\/li>\n\n\n\n<li>4 Fulles de Llorer<\/li>\n\n\n\n<li>1 Cap d&#039;Alls sencer<\/li>\n\n\n\n<li>1 Ceba gran<\/li>\n\n\n\n<li>1 Cullerada sopera de Pebre vermell Dol\u00e7<\/li>\n\n\n\n<li>Oli d&#039;Oliva i Sal<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3 dels Judices:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Posem en remull els jueus durant 24 hores. Els escorrem i els dipositem en una cassola ampla coberts amb aigua freda. Afegirem les fulles de llorer, els alls, el peu de porc, l&#039;orella, la cansalada i el xori\u00e7o que el punxem perqu\u00e8 deixi anar millor el seu greix. La carn la coem sencera sense trossejar. La sal la posarem gaireb\u00e9 al final de la cocci\u00f3.<\/li>\n\n\n\n<li>Cuinem amb el foc el m\u00e9s baix possible i la cassola tapada. Quan comenci a bullir, traurem l&#039;escuma que queda per sobre.<\/li>\n\n\n\n<li>Afegim aigua freda un parell de vegades ja que aix\u00ed espantem els jueus i es couran millor. De tant en tant remourem la cassola.<\/li>\n\n\n\n<li>Prepareu el sofregit posant oli d&#039;oliva en una paella. Quan estigui calent sofregirem la ceba fins que quedi transparent. Apartarem del foc i llen\u00e7arem el pebre vermell dol\u00e7, remourem b\u00e9.<\/li>\n\n\n\n<li>Han transcorregut unes 2 hores i 15 minuts i traurem les carns de la cassola per trossejar-les.<\/li>\n\n\n\n<li>Afegirem el sofregit a la cassola i les botifarres que les hem punxat. Afegirem una mica m\u00e9s d&#039;aigua freda si cal. Courem uns 10 minuts m\u00e9s.<\/li>\n\n\n\n<li>Traiem de la cassola el cap d&#039;alls i afegim les carns trossejades. Salarem el guisat i posarem l&#039;orenga i hi incorporarem les carns. Cuinem durant un parell de minuts m\u00e9s comprovant que els jueus estiguin tendres.
