Arr\u00f2s Bomba<\/li>\n\n\n\n<li>2 litres Fumet de Peix (aprox)<\/li>\n\n\n\n<li>1 Ceba gran<\/li>\n\n\n\n<li>3 Dents d&#039;All<\/li>\n\n\n\n<li>3 Tom\u00e0quets madurs<\/li>\n\n\n\n<li>1 Pebrot Vermell<\/li>\n\n\n\n<li>1 \u00d1ora o Pebrot Choricero<\/li>\n\n\n\n<li>1 Cullerada de Pebre vermell Vermell dol\u00e7<\/li>\n\n\n\n<li>50 ml. Brandy (Conyac)<\/li>\n\n\n\n<li>Oli d&#039;Oliva<\/li>\n\n\n\n<li>Sal<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Posem la nyora o el pebrot xoricero en remull durant una mitja hora i despr\u00e9s amb un ganivet traurem la polpa, tal com es veur\u00e0 al v\u00eddeo.<\/li>\n\n\n\n<li>Partim els llam\u00e0ntols tallant el cap i separant les pinces. Obrim el cap per la meitat i fem un parell de trossos. La cua la tallem a rodanxes gruixudes.<\/li>\n\n\n\n<li>En una cassola gran posem oli d&#039;oliva i quan estigui ben calent fregirem lleugerament els llam\u00e0ntols pels dos costats fins que canvi\u00efn el color. Reservarem.<\/li>\n\n\n\n<li>En el mateix oli calent fregirem la s\u00edpia tallada a quadradets. Reservarem.<br>Sofregim la ceba i els alls picats, amb el foc baix durant un parell de minuts. Afegim el pebrot tallat a quadradets i sofregim tot junt durant uns 4 minuts sempre amb el foc molt baix.<\/li>\n\n\n\n<li>Hi afegim el tom\u00e0quet triturat, i donem unes voltes perqu\u00e8 s&#039;integri tot. Sofregim tot junt fins aconseguir que ens quedi el sofregit com si fos una melmelada. Afegim la polpa de la nyora i remenem perqu\u00e8 s&#039;hi integri.<\/li>\n\n\n\n<li>Tirem el brandi a la cassola amb molta cura de tenir apagat l&#039;extractor de la cuina, ja que en encendre&#039;s el brandi podria pujar la flama i provocar un incendi. Flambegem el brandi.<\/li>\n\n\n\n<li>A continuaci\u00f3 hi afegirem el pebre vermell i uns brins de safr\u00e0. Donarem unes voltes i afegirem l&#039;arr\u00f2s remenant perqu\u00e8 es barregin b\u00e9 tots els sabors<\/li>\n\n\n\n<li>Afegirem el brou de peix bullint. Es calcula que per una tassa d&#039;arr\u00f2s cal posar entre 3 tasses i mitja o 4 tasses de brou ja que hem d&#039;aconseguir que quedi cald\u00f3s. \u00c9s millor tenir m\u00e9s quantitat de brou preparat i ben calent i afegir-lo a poc a poc, si veiem que l&#039;arr\u00f2s ens queda molt sec.<\/li>\n\n\n\n<li>Incorporem la s\u00edpia a la cassola.<\/li>\n\n\n\n<li>Els primers 8 minuts courem l&#039;arr\u00f2s amb el foc fort. Afegirem els llam\u00e0ntols i courem l&#039;arr\u00f2s ara a foc lent fins que estigui cuit al nostre gust. Solen ser uns 8 minuts m\u00e9s.
