Muntem les clares a punt de neu.<\/li>\n\n\n\n<li>Posem en un bol gran els rovells d&#039;ou, el iogurt, el xarop d&#039;atzavara, l&#039;oli i la ratlladura de llimona. Batem b\u00e9 amb un batedor el\u00e8ctric fins que els rovells es blanquegin.<\/li>\n\n\n\n<li>Barregeu el llevat qu\u00edmic amb la farina d&#039;espelta. Tamisem i afegirem a la barreja anterior.<\/li>\n\n\n\n<li>Batrem tot junt fins que quedi ben integrat.<\/li>\n\n\n\n<li>A continuaci\u00f3 i amb moviments envoltants de baix a dalt anirem afegint a poc a poc les clares muntades fins que quedi ben barrejat.<\/li>\n\n\n\n<li>Untem amb mantega les parets i el fons d&#039;un motlle rod\u00f3 de 20 cent\u00edmetres de di\u00e0metre. Empolvorarem farina per tot el motlle i traurem el sobrant.\u00a0<\/li>\n\n\n\n<li>Posem la massa de pa de pessic al motlle. Hem preescalfat el forn a 190 \u00ba cent\u00edgrads per dalt i baix i enfornem durant 30 minuts aproximadament. Cal fer la prova del escuradents per veure si est\u00e0 cuit per dins.
