Vi Pedro Xim\u00e9nez<\/li>\n\n\n\n<li>250 ml. Aigua<\/li>\n\n\n\n<li>50 grs. Panses Sultanes o Corint<\/li>\n\n\n\n<li>20 grs. Pinyons<\/li>\n\n\n\n<li>1 Gla\u00e7 de Caldo de Carn<\/li>\n\n\n\n<li>Orenga<\/li>\n\n\n\n<li>Oli d&#039;Oliva<\/li>\n\n\n\n<li>Sal i Pebre negre<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Salpebrem la carn pels dos costats i posarem tamb\u00e9 per sobre l&#039;orenga.<\/li>\n\n\n\n<li>En una paella gran posem oli d&#039;oliva i quan estigui bullent daurarem els filets sencers per tots els costats amb el foc molt fort.<\/li>\n\n\n\n<li>S&#039;ha de daurar per fora i quedar crua per dins. Reservem.<\/li>\n\n\n\n<li>Traiem de la paella una mica de l&#039;oli de fregir que reservarem. Afegirem a la paella el vi Pedro Ximenez i abaixem el foc per glacejar l&#039;oli. Quan hagin passat un parell de minuts, apagarem el foc i reservarem la salsa en un recipient.<\/li>\n\n\n\n<li>Posarem a la paella l&#039;oli que hav\u00edem reservat i si cal afegim-hi una mica m\u00e9s. Quan estigui calent afegirem la ceba tallada a quadradets, la pastanaga i el porro en discos i sofregirem amb el foc baix.<\/li>\n\n\n\n<li>Quan estiguin escalfades les triturarem juntament amb l&#039;aigua amb un batedor el\u00e8ctric. Posem la salsa a la cassola i afegim la reducci\u00f3 del vi. Afegim tamb\u00e9 el gla\u00e7\u00f3 de brou de carn i remourem perqu\u00e8 s&#039;integri b\u00e9 la salsa.<\/li>\n\n\n\n<li>Tallarem el filet a talls diagonals d&#039;un gruix d&#039;1 cent\u00edmetre i mig i els incorporarem a la salsa juntament amb el suc que hagi deixat anar la carn.<\/li>\n\n\n\n<li>Afegirem una mica m\u00e9s d&#039;orenga, els pinyons i les panses i courem tot junt durant uns 10 minuts amb el foc baix remenant perqu\u00e8 no se&#039;ns enganxi la salsa.
