Llu\u00e7 sense espines<\/li>\n\n\n\n<li>300 grs. Cua de rap sense espines<\/li>\n\n\n\n<li>200 grs. Salm\u00f3 Fresc sense espines<\/li>\n\n\n\n<li>150 grs. Gambes pelades congelades<\/li>\n\n\n\n<li>1 Ceba gran<\/li>\n\n\n\n<li>350 ml. Llet<\/li>\n\n\n\n<li>30 grs. Tom\u00e0quet Fregit<\/li>\n\n\n\n<li>30 grs. Farina<\/li>\n\n\n\n<li>80 ml. Brandy<\/li>\n\n\n\n<li>Oli d&#039;Oliva<\/li>\n\n\n\n<li>Sal i Pebre negre<\/li>\n\n\n\n<li>Nou Moscada<\/li>\n<\/ul>\n\n\n\n<p>Per a la <strong><a href=\"https:\/\/elfornerdealella.com\/ca\/salsa-beixamel\/\">Salsa Bechamel (veure v\u00eddeo recepta aqu\u00ed)<\/a><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>750 ml. Brou de Peix<\/li>\n\n\n\n<li>300 ml. Nata l\u00edquida per cuinar<\/li>\n\n\n\n<li>75 grs. Mantega<\/li>\n\n\n\n<li>60 grs. Farina<\/li>\n\n\n\n<li>Sal i Pebre Negre<\/li>\n\n\n\n<li>Nou Moscada<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Tallem el llu\u00e7, el rap i el salm\u00f3 a daus petits. En una cassola hi posem oli d&#039;oliva i quan estigui calent hi afegim la ceba picada.<\/li>\n\n\n\n<li>Ofeguem i abans que es dauri afegim el peix trossejat. Salarem el peix. Farem unes voltes i courem durant un parell de minuts.<\/li>\n\n\n\n<li>En una paella petita i amb una mica d&#039;oli fregirem lleugerament les gambetes i les salem. Escorrem les gambes i guardem el suc que hagin deixat anar. Les posem de nou a la paella i les flamegem amb el brandi. Per flambejar cal llen\u00e7ar el brandi a la paella i quan estigui una mica calent encendre&#039;l amb un encenedor i deixar cuinar el brandi fins que la flama s&#039;apagui. Aquesta operaci\u00f3 cal fer-la amb l&#039;extractor apagat ja que si la flama est\u00e0 en marxa podria arribar a cremar l&#039;extractor.<\/li>\n\n\n\n<li>Incorporem les gambes escorregudes a la cassola amb el peix i reservarem el suc. Colem el peix ja que tamb\u00e9 haur\u00e0 deixat anar suc i el reservarem.<\/li>\n\n\n\n<li>Posarem de nou el peix a la cassola i amb el foc baix hi afegim el tom\u00e0quet fregit i ho remourem una mica. A continuaci\u00f3 posarem la farina que l&#039;escamparem per tota la superf\u00edcie perqu\u00e8 es cogui i no faci grumolls. Remenarem tot perqu\u00e8 es barregi b\u00e9.<\/li>\n\n\n\n<li>Posem en un bol el peix, la llet, el pebre i la nou moscada. Ho triturem amb un batedor el\u00e8ctric i courem la massa amb el foc baix remenant sempre perqu\u00e8 no s&#039;enganxi a la cassola. Estar\u00e0 cuita quan la massa es comenci a enlairar de les parets de la cassola, aproximadament uns 5 minuts.<\/li>\n\n\n\n<li>Guardarem la massa en una plata i la deixarem refredar totalment.<\/li>\n\n\n\n<li>Per hidratar les plaques dels canalons cal seguir les instruccions del fabricant de la pasta. Es pot fer amb plaques que no es bullen i el proc\u00e9s \u00e9s m\u00e9s curt. Escorrem les plaques i les posem damunt uns draps de cuina perqu\u00e8 s&#039;acabin d&#039;assecar.<\/li>\n\n\n\n<li>Posem un tros de massa en forma de croqueta al centre de cada placa i enrotllem deixant la uni\u00f3 per sobre perqu\u00e8 no s&#039;obrin. Els tapem amb un drap de cuina. Es poden congelar per\u00f2 vigilant que no s&#039;enganxin els uns amb els altres per poder descongelar-los d&#039;un en un<\/li>\n\n\n\n<li>Preparem la salsa beixamel posant la mantega en una cassola i quan estigui fosa apartem la cassola del foc i afegim la farina remenant perqu\u00e8 no faci grumolls. Afegim el brou de peix a poc a poc i ho barregem b\u00e9. Posem de nou la cassola al foc i hi afegim el suc que ten\u00edem reservat, la nou moscada i el pebre. Remenem sense parar perqu\u00e8 no s&#039;enganxi.<\/li>\n\n\n\n<li>Quan comenci a espessir afegim la nata per cuinar i continuem remenant fins que estigui ben lligada. No ha de quedar gaire espessa ja que en refredar-se s&#039;espesseix.<\/li>\n\n\n\n<li>A la safata del forn hi posem unes nous de mantega al fons ia sobre els canalons. Posem la salsa beixamel que ha de cobrir els canalons ia sobre hi posem el formatge ratllat.<\/li>\n\n\n\n<li>Gratinem els canalons procurant posar la safata del forn a la part baixa del forn perqu\u00e8 es vagin escalfant i alhora gratinant els canalons.<\/li>\n\n\n\n<li>Quan estigui el formatge daurat els traiem del forn.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Us aconsello
