Cargols<\/li>\n\n\n\n<li>60 grs. Pernil Serrano<\/li>\n\n\n\n<li>60 grs. Xori\u00e7o Picant<\/li>\n\n\n\n<li>600 grs. Tom\u00e0quet Fregit<\/li>\n\n\n\n<li>100 ml. Vi Blanc<\/li>\n\n\n\n<li>1 Ceba gran<\/li>\n\n\n\n<li>3 Dents d&#039;All<\/li>\n\n\n\n<li>1 Gla\u00e7 de Caldo de Carn<\/li>\n\n\n\n<li>2 o 3 Caienes<\/li>\n\n\n\n<li>Oli d&#039;Oliva<\/li>\n\n\n\n<li>2 Fulles de Llorer<\/li>\n\n\n\n<li>Farigola<\/li>\n\n\n\n<li>Pebre Negre i Sal<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Posem abundant aigua freda i un grapat de sal en un recipient gran i deixarem els cargols durant uns 40 minuts o fins que comencin a sortir de la closca. Cal anar fregant els cargols perqu\u00e8 deixin anar totes les impureses. Canviem l&#039;aigua com a m\u00ednim dues vegades fins que vegem que l&#039;aigua surt ben neta.<\/li>\n\n\n\n<li>Abans de coure&#039;ls cal mirar-los d&#039;un en un, ja que si no surten de la petxina poden estar morts.<\/li>\n\n\n\n<li>En una olla gran posarem els cargols, les fulles de llorer, i la farigola. Afegirem aigua freda per a la cocci\u00f3.<\/li>\n\n\n\n<li>Amb el foc molt molt baix perqu\u00e8 acabin de sortir de la closca, courem els cargols fins que l&#039;aigua bulli. Amb una escumadora traurem l&#039;escuma que es vagi quedant per sobre de l&#039;aigua.<\/li>\n\n\n\n<li>Quan bulli b\u00e9 hi afegirem la sal i deixarem bullir amb el foc baix durant uns 20 minuts. Escorrerem els cargols.<\/li>\n\n\n\n<li>Posem oli d&#039;oliva en una cassola fonda i ampla i quan l&#039;oli estigui calent hi afegirem les cebes i els alls ben picats. Ofegarem amb el foc baix i abans que es dauri la ceba abocarem el pernil i el xori\u00e7o tamb\u00e9 ben picats.<\/li>\n\n\n\n<li>Remenarem b\u00e9 perqu\u00e8 es vagi barrejant tot, tenint cura que no es dauri gaire.<\/li>\n\n\n\n<li>Afegirem la salsa de tom\u00e0quet i ho deixarem coure tot junt.<\/li>\n\n\n\n<li>Tot seguit afegim el vi blanc i remenem. Quan s&#039;hagi evaporat l&#039;alcohol hi tirarem els bitxos, el gla\u00e7\u00f3 de brou de carn esmicolat, i el pebre negre.<\/li>\n\n\n\n<li>Afegirem aigua calenta per a la cocci\u00f3 i posarem els cargols. Taparem la cassola i deixarem bullir a foc lent durant uns 20 minuts. Cal controlar que no hi falti salsa i si cal s&#039;hi afegeix una mica d&#039;aigua calenta. Tastarem tamb\u00e9 de sal i de picant i si no pica prou afegim m\u00e9s pebre o una caiena m\u00e9s.<\/li>\n\n\n\n<li>\u00c9s convenient deixar reposar aquest plat.
