Mentrestant, tamisarem la farina perqu\u00e8 no es formin grumolls.<\/li>\n\n\n\n<li>Un cop l&#039;aigua comen\u00e7a a bullir, llen\u00e7arem la farina de cop i amb una cullera de pal, remourem b\u00e9 fins que veiem que la massa se separa de les parets del recipient. Retirarem del foc i deixarem entebeir la massa. No ha d&#039;estar gaire calent, ja que en afegir l&#039;ou, aquest es couria.<\/li>\n\n\n\n<li>Quan la massa estigui t\u00e8bia, afegirem els ous d&#039;un en un barrejant-los b\u00e9 fins que s&#039;incorporin a la massa. Aquesta ha de quedar tova, per\u00f2 mantenint la textura de corbata.<\/li>\n\n\n\n<li>Posarem la massa choux en una m\u00e0nega pastissera amb un filtre d&#039;estrella, i escudellem les lioneses en una plata prove\u00efda de paper de coure.<\/li>\n\n\n\n<li>Les pintarem amb un ou batut, i seguidament les enfornarem a una temperatura de 200\u00ba durant 25 minuts +\/-<\/li>\n\n\n\n<li>Un cop estiguin fredes, les partirem en dues meitats, i en una les farcirem de crema, de nata o de t\u00f2fona.
