Gambones<\/li>\n\n\n\n<li>1,750 ml. Fumet de Pescado aprox.<\/li>\n\n\n\n<li>400 ml. Nata per cuinar<\/li>\n\n\n\n<li>40 gr. Maizena<\/li>\n\n\n\n<li>100 gr. Salsa de Tom\u00e0quet fregit<\/li>\n\n\n\n<li>1 Ceba<\/li>\n\n\n\n<li>1 Pastanaga<\/li>\n\n\n\n<li>1 Porro<\/li>\n\n\n\n<li>50 gr. Mantega<\/li>\n\n\n\n<li>75 ml. Brandy<\/li>\n\n\n\n<li>Oli d&#039;Oliva<\/li>\n\n\n\n<li>Sal i Pebre negre<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">ELABORACI\u00d3:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pelaremos los gambones y reservaremos las cabezas y las pieles.<\/li>\n\n\n\n<li>Cortaremos la zanahoria, picaremos el puerro y la cebolla.<\/li>\n\n\n\n<li>En una cazuela pondremos la mantequilla y un chorrito de aceite. Agregaremos las verduras y rehogaremos unos 10 minutos con el fuego bajo. A\u00f1adiremos la salsa de tomate. Daremos unas vueltas<\/li>\n\n\n\n<li>Incorporaremos las c\u00e1scaras de los gambones y coceremos unos 10 minutos. Flambearemos con el brandy. Cuando se apague la llama apagaremos el fuego.<\/li>\n\n\n\n<li>Trituraremos las pieles con un poco del caldo de pescado. Batiremos hasta que quede bien fino. Se puede chafar tambi\u00e9n con un colador chino.<\/li>\n\n\n\n<li>La crema de gambones la volveremos a poner al fuego y disolveremos la maicena con un poco de caldo hasta que no queden grumos. La a\u00f1adiremos a la crema y agregaremos m\u00e1s caldo para terminar la cocci\u00f3n.<\/li>\n\n\n\n<li>Despu\u00e9s volveremos a colar el caldo con un colador de tela.<\/li>\n\n\n\n<li>Saltearemos los gambones con un poco de aceite y los a\u00f1adiremos a la crema junto con la nata para cocinar.
